smoke
Sambo's are one of the best fish to smoke, if you have a Webber BBQ put about 14 nuggets of heatbeads in the bottom and get them fired up.
while your waiting for the heatbeads to get going fillet the fish into 2cm thick slices about 100mm wide and 150mm long and soak them in a brine of water , salt, soy sauce and brown sugar ( the longer you can marinade them the deeper the flavour in the fish but 2 hours is fine) get a block of wood and soak it in a bucket of water , I use white gum as it smokes well , if you want to hot smoke it put it over the top of the smoke/ heat beads and they take about 20 mins to cook, if you want to cold smoke them wait until the fire has died down and let the smoke cook them and they take about 2 hours to cook.

Are your Dhu lumps pretty
Are your Dhu lumps pretty big?? We hardly ever get them.
If I spent half as long fishing , as I do reading this bloody forum , I'd be twice the fisherman I am.

I kept and ate a just size
I kept and ate a just size sambo and for all those that take tailor home for a feed, which I always do, sambo is much the same, a perfectly good feed, the bigger ones can have worms in the flesh thats all
I am, as I've said, merely competent. But in an age of incompetence, that makes me extraordinary.

Oh dear
I was given a boat and all I got were these massive fish. Sounds like someone needs to make a phone call from the boat ramp for the Wah-Wah-Wambulance! First world problems.

I have had the oppostie problem
I am quite new to fishing in WA and have been lucky enough to find all of the normal species, however I have not been able to find the big sambos everyone keeps complaining about, maybe we can help each other, don't really eat fish just like fish that fight. Is it really that common to find them close in metro waters?

Sambo's
They come in to breed around November and finish around Feb, the longer the season the lighter the fish , big schools are about 4/5 NM WSW of Rotto , big fish up to 60kg and 1.8m long, the big girls are on the bottom and you need at least 350gm jigs I like the SEA ROCKS as they are a shorter jig than most in that weight and work it in the bottom 15m of water if you want the big one's.
Gemini wreck holds fish to about 30kg all year and the big oil platform that sunk further north has some of the best shallow water sambo fishing there is.
You must use braid , strong hooks and leader (200lb) I use PE5 mostly but some go up to PE10 but if your rod and reel can't handle it why use it, I run 12kg's of drag when fishing for them .

jigging
ive definatly found that plastics and jigs have been left behind for the long strip of fresh squid drifted down. but i think thats because im fishing shallow. you definatly cant beat the hard hit on the jigs. so much fun in the 90s
