Smoking Fish

Thinking about smoking some fish as a first try. I intend to use the Webber but any suggestions and in particular a quick brine recipe.

 Enough salt to float a small

 Enough salt to float a small potato in a tub of water. Then match the amount of salt with raw or brown sugar.  Mix it till it all devolves. If your fillets are say 2' thick brine it for 45mins. Pat it dry with paper then give it a light spray with olive oil out of a can. Smoke for about 30mins

In my Nipper Kipper fish

In my Nipper Kipper fish smoker:

 

2 x tbls brown sugar

2 x tbls Salt

500ml water

Leave for minimun of 15mins.

 

Cooking time 20mins.

I have found the fish makes the rolly papers a bit soggy and difficult to light up ,probably healthier than smoking tobacco but
