Personally

i'd go with just a single hook as 2 hooks will impead the live bait too much and tire it out too quickly.

I also only use a single hook

I also only use a single hook for the same reason as Matt described. Also important to make sure the hook size is suitable for the bait your using. A hook that's too large will leave the bait unable to stay upright & appear unnatural to the mulloway. A bait that can't stay upright will also die rather quickly. I don't know how much if any difference it makes but I also use a leader about 80cm long to give the bait a bit more freedom. I have noticed that using a flouro leader instead of mono leader gets me more runs.

Yep single hook and running

Yep single hook and running sinker for me. Hook size critical, too big wont swim correct too small the hook won't set.

Lightly hook through the back

Mon, 2012-12-10 20:18

Lightly hook through the back just behind the head or top jaw if lots of tide running.  Fish will swallow it head first anyway.  Hook size will vary with the size of the bait.  Use at least a one metre leader with a running sinker as light as you can get away with.

Three way swivel with sinker at the bottom with 40lb leader running to a single live bait hook has done me well in the past

I always pin the single hook

Mon, 2012-12-10 20:22

I always pin the single hook in the shoulder (just behind the head above lateral line. Be sure to stay clear of the lateral line or you will pretty much paralyze the bait & it will die. Hook size depends on bait size. For tailor I usually use a 8/0 or 10/0, herring 5/0 or 6/0, scalies 3/0 or 4/0, always Gamakatsu or Owner circles for me. That's just a rough guide though, take it on a bait by bait basis. Pays to attach the hook via a loop so you can swap them quickly if you need to.

Try hooking your live bait in

Tue, 2012-12-11 22:08

Try hooking your live bait in different ways. You are trying to make your bait stand out. Other successfull ways to hook a livebait are, through the top jaw, near the tail below the lateral line or for something different just hook through one side. Small hooks are best. 5/0 or 6/0 is ample for fish around 15-20kg. Single hook presents the livie better.

James tip - snip either the

James tip - snip either the bottom half or top half of your live baits tail fork to force it to swim differently to the bait in the area. You can make a bait swim on the top of the water if you snip the top half which is great for snaggy areas or if the crabs are a problem.
