HDS sounder photos

Still trying to get used to my HDS 8 and I'm having trouble identifying fish on the sounder.
I'm using palette 13 and the sensitivity is around 60 and the colourline around 70. The transducer is transom mount 50/200khz and this was taken on the 200khz setting.
This photo was taken when I was catching fish
and this when I thought there was fish (there was fish on the surface but I thought there would be some on the bottom but nothing? It showed what I thought was a school on the bottom and these were here the hole time I was fishing.
Also what speed can I go before the reading become inaccurate? What palette do people use? what kind of sensitivity for what waters?
Cheers

Not sure of my exact setting
Not sure of my exact setting but pretty certain i have a far higher sensitivity rating but i also block out a lot of that surface noise. That second pic looks to me like you're letting in too much in and might not nessecarily be fish up the top. Try setting the noise rejection and surface clarity settings lower and see how you go. Mind you i'm no expert but thats what works for me!

If i put my sensitivity up
If i put my sensitivity up any more i get heaps of noise! Ive spoken to a few people and they all run around 80+. Especially since i was in shallow water in those photos??
