Freezing tuna

Hey guys,
Heading up north in a few days and hoping to get into some tuna.
Can anyone let me know how well they freeze when cryovaced? Do they keep their texture or go all mushy when defrosted.

We got a 50kg yellow fin off
We got a 50kg yellow fin off exmouth. It was bled gutted gilled and straight in a ice slurry. Filleted cryo vacked and frozen. That was 3 months ago and still have it for sushi every week
Any one free to help me pull my drum lines tomorrow?

I generally dont gut/gill fish when i put them in an ice slurry. Does this improve eating quality? You dont get any ice burn on the belly flaps?

Ice slurry should be 2 parts
Ice slurry should be 2 parts sea water to 1 part ice, no ice burn! cryo vac will stop freezer burn

I froze some fin and the steaks were still good tucker light searing em on the barbie, just had a bit stronger smell.

It freezes OK...........I give frozen tuna away, they all seem happy, I only eat it fresh.
