Nirey electric sharpener, domestic model - about $130-$140

Use it to set the edge and then run the knife over a fine steel. It will be sharp enough to shave with.

cheers

I use a Chef Choice as well. Does a great job on all knifes from your kitchen to your fishing knifes.

Give the site sponsor Oceanside a ring, they stock them.

CC120

Hi mate, Thats correct we do stock the Chefs Choice CC120. A very easy unit to use and has very good results for alot of our Fishwrecked customers who have purchased them from us. We have recently just sold out though unfortunatley though we should have new stocks in approx 1 week. We sell them generally for around $ for Fishwrecked members.

Ditto to the CC120

Took me ages to hone the knives (both kitchen and fishing) on stone and steel. Got the CC120 and they can produce an edge that is shavable. Also probably use mine twice a year on domestic knives, and about 3 times a year for the fishing ones.

Got it sent up by Ryan about 4yrs ago and havent looked back.

And remember, a blunt knife is far more dangerous than a sharp one.
