Was wondering if its doable to do a day trip from Coral Bay and launch at Ningaloo Station. Anyone done that before?

You need to access with a key.
There are no accessible points without a key for that area. Your best launching at any stage of the tide would likely be Point Billy. You'll need to set it up with Phil to get a key for it, pay for your day access and deposit, give your key back at the end of the day.
And put up with a likely horrendous track both ways. I hope your trailer is up to it.

Good luck to you
The tracks in and out are munted to say the least. If you like travelling at walking pace then it’s all good. Even scarier is the lady running the place , make the Bates motel look like Disneyland . A really weird vibe out there .
My wife understands why I clean my rods n reels in the shower....

Sounds too hard for a day
Sounds too hard for a day trip, would only be worth it if staying a while.

Yes,
I wouldn't be wanting to do a return trip in a day towing a boat on that road. Conditions vary greatly--Shire on seems to grade the station road in once a year, in June, and of course the track north from the station is never graded, just gets a plough pulled over it occasionally.
Two big moments of relief for me on our annual trip there--Phew, made it into Winderabandi with everything in one piece, and Phew, made it out to the bitumen with everything in one piece. Many don't.

Simo have been doing a lot
Simo have been doing a lot of research into this and you have to launch on high tide from what I’ve had a read of and the track is pretty much a bearing breaker I wanted to launch my 23ft Wellcraft there but Won’t do it now from the conversation I’ve had with a few people will do the steam from coral bay if weather any good

Good shelter right in the corner
At Pt Billie, straight in from the entrance. Unless it goes around north, in which case you steam up to the other end and get behind the north side of Winderabandi
