Giant snook in the smoke .

Took Eric out today after telling him the giant
snook are in numbers in close . Whacked two in
first run up the reef . Plan worked great one or
two for fresh cutlets another couple for the smoke .
Eric managed a great one just on a 1m with a double
hook up and me losing mine . But happy Eric got
his bloody hard netting when they start getting up
there .. lost a few even larger models with hooks
not setting . Off to tackle store too stock up I
think .. cheers pirate .

Smoked perfectly
Tried them today. Moist and delicious. Mild smoky flavor - amazing considering the huge amount of smoke that came out of the smoker. Cheers Pirate

Spaniards smoke well in my
Spaniards smoke well in my experience too Andy. The oily flesh really responds well. I had smoked saltwater barra and fingermark recently. Tasted good but a bit of a waste IMO.

Smoked mullet
was always very highly regarded in NZ due to the high oil content.
Smoked fish pie in a white sauce with whole eggs and a mashed potato topping with a cheese crust always went down well.

Rub .
I think the rub of brown sugar and sea salt really helps
the flavour profile just for bit of sweetness. But yeah
lots of wood chips and running two burners basically
flash smokes quickly while cooking the flesh at
same time holding in the moisture of the fish itself.

I've been watching a lot of the yank youtube videos Pirate, they are all over this stuff. Some excellent fish smoke recipes.
But as you say Brown sugar, Kosher salt and ground black pepper over night.
