demersal jigging q- how far off bottom do you jig?

i know you drop to the bottom and then jig , but how far off the bottom do you wind up before dropping to bottom?
question 2 is when drift is strong and line gets angled, maybe 30 degrees or so, do wind whole way up and drop again. i know casting to where you will drift and heavier jigs will help
lets say for in about 50m depth.

dhuies are very curious fish.
dhuies are very curious fish. they usally sit either deep in a cave or the sand infront of a cave, i have dove, saw a 15kg dhuie in about 28m water but i was out of breathe so as i came up another guy went down and shot it, it had followed me up and come about 15m of the bottom when he hit it. also down south mate saw a 13kg dhuie in 20m, came up as he looked down it had come almsot the whole way up after him he shot it with one fin still out the water, very pretty looking female and only one for the day. so i reckon jig for them near the cave entrances start low then work up, they will follow :)

Depending what i'm fishing
Depending what i'm fishing for and what depth, but say 50m for dhuies, I would go up about 10m or so, but sometimes will go 2-5m. I've had dhuies come up 10m before smashing the jig. Sometimes its good to pause, twitch, pause, small jerk at end before dropping as sometimes stopping and twitching will entice a following fish to smash it.
If the line is at 30 degrees I find it wayy too hard to jig most of the time, so just up the jig size. If your jig cant stay at the bottom, then you should really upsize it if you can (completely different to plastics where thats a good thing). On really fast drift days even with heavy jigs (but compact) I havent had a lot of sucess while jigging so switch to another method now if 150g wont stay down in 40m.
Also, if casting, dont do what some guys on sambo charters do and let the jig flutter down. You need to stop it after hitting the water, then release so it drops like a rock not a leaf. Once at the bottom your jigging style should get it dropping like a leaf (depending on the jig and your jigging action)
