chinamon orange bits in flesh

Gday everyone,
My mate caught a couple of chinamon out off Point Samson today. When he fileted the fish it had orange marks between the skin and the fillet. Just wondering if anyone has experienced this and what it may be.

Cut it off
I have eaten a chinaman fish off Broome caught on a charter boat. I do believe i remember something similar. That fish was 6 kilo, so had time enough if it is just their fat deposits to have plenty. I remember getting feirce stomach cramps that night after eating, never spewed or had diahorra, but remember it.
Hope it tastes good and your have no ill affects.

just looks like you cut too close to the gut. Caught plenty off Samson and they were all great.

Thats normal. the bigger
Thats normal. the bigger they get the worse it is. When you skin them you just leave a bit of meat on the skin otherwise you have to cut it all off. When they get over 10kgs it will stain you hands orangy red when you fillet them. I wouldnt keep one that big but ive filleted a few up to 15kgs and the layer of red/orange meat under the skin is up to 1cm thick and youll end up with orange hands when your finished a bit like handling tumeric.
