Chilli Sauce

Bottled up the first batch of chilli sauce for this summer.
The darker coloured sauce is the sweet and the lighter is a bit spicier.. Should keep me going till the rest of the chillies are ripe.

Recipe has been handed down by word of mouth from generation to generation... Lol
Actually my dad did start me on this recipe but i have modified it over the years. Drop into Shore catch on the 10th Dec and i will give you a taste. If you are still intrested then i will tell you how it was made. Goes great with a snag.

Nice one! I'm down to the dregs of my last bottle of home made sauce now.. all the chili plants have plenty of pods on them but none are ripe yet.. looking forward to the first harvest haha

I dont really like their taste. I find it a bit bland. These are the thai type chillies that are about 1 1/2-2 inches long with a sweet flavor, hence the sweet sauce.
I have 1 trinidad scorpion in the garden that my son is growing that makes a mean sauce but it is covered in buds atm. Be a while before some ass burner is made and usually it is all given away. Some people are mad for that shit..Lol

Hahaha I save all my trinidad scorpions and carolina reapers to make chilli flakes/chilli powders. Tiniest sprinkle will do a whole meal for 6
prefer a mix of cayenne, thai and bhuts for my sauces. That being said ive never been able to make two lots the same flavour haha

but i have just pickled some crays in some finely diced caroliner reapers. Going to be good at the family BBQ.

The very easy way mate
after cooking I put them in a jar of vinegar and whatever chilli sliced up. Leave it in fridge for atleast a week before consuming. Beware! Addictive! Also have curried cray and a few others.
I want to try the method of putting the meat raw into jars of boiling vinegar and let the meat cook and seal the jar in one. I think it has been described in a previous thread.
