Got this one at Pilgs, around 6kg, my favourite eating fish (at least one of, too many up here to choose!!)

Just right for the magic
What a spanker. Try this simple Rankin classic.
Fillet thin. Butter and your taste of garlic. Hot pan fry quick, under cooking better.
No fancy crap needed. Heaven on a stick.

yeah, I have cooked them what I suspect now is either too thick or for too long and they are like rubber. Really couldn't even chew it let alone cut it with a knife. Will try your recipe Crasny1 before I give up. cheers, Bod

stay away from fresh water
With those thick fillets you really need to slice them in half first and try keep them away from fresh water if you can.

fresh water?
what effect does that have? I always wash them under the tapwater. I am now slicing them thinner and they are much better. The butter and garlic sounds pretty good.

awsome ranken, gotta love the taste of fresh fillets, and yeah cut them thin and a quick fry in butter after dusting in flour, no need for anything else. as Adam said stay away from fresh water,we either rince in salt water after filleting or just bag up the fillets with a cryovac and rince just before cooking, the fillets are near always soft and juicy

Thanks to everyones comments on this spankin. Tips for the cooking are gold as this fish is toooo nice to stuff up! We don't use fresh water either and cryovac when needed (try to eat these ones fresh!!). Next spankin we get its in the pan with garlic and butter Yummy....................
