Yum
That answers my food question.
Is it lightly seared on all sides before it's sliced up?

I've tried this with tuna
I've tried this with tuna (southern blue) but I cant say I like the way it came out. Something to do with a hot exterior, cold interior. I presume you let the fish get to room temperature first?
What did you roll it in? Looks like some sesame, but then something else.

I got the River Cottage Meat
I got the River Cottage Meat Book for Xmas, and the author goes to pains to point out that you have to let you meat get to room temperature before you roast UNLESS you're cooking for his wife. Her ideal roast was seared on the outside, refrigerator-cold on the inside.
I guess it takes all sorts, but sign me up for that, it looks great =)
