I came across this on another fishing forum and thought it may be of interest to some. It clearly has US origins but that shouldn't be an issue.

Certainly agree that dry fillets are the go
But I will be buggered if I would brine them .....perhaps they are referring to fresh water fish

Brine solution
I believe the brine solution mentioned in the article is a sea water substitute should you not have have any sea water available. 35g of salt per litre of water would be about right.

Sea water rinse
Last few trips north, we've been thoroughly rinsing the fillets in clean seawater before vacuuming. It makes an unbelievable difference. Even after 8 or 9 months, when you open the vac bag, the fillets smell and taste like they just came out of the ocean.

Especially at Gnaraloo, we fill up containers when coming in the bay to rinse the fillets. Go knows what the water is running on the filleting table area.

Fill 2 or 3 of these before you hit the ramp,take home and fill rinsed out 2lt milk containers and freeze for the next trip.(salt ice)

Fish doesn't last long
Fish doesn't last long enough here to worry about it. Pat the fillets dry then vac seal them, a roll of scott towels is cheap.
