Eating Stingray

I've had a gutful of eating Tailor lately and after losing 4 sets of gangs tonight, (it's going off around here on the beaches at sunset) my last cast produced a nice Eagle ray. I took it home and de-winged it, lightly floured and deep fried....not bloody bad, tastes a bit like Squid and/or Abalone with the same texture, I was suprised. Now I got about 4kg left to experiment with on some better recipes........first ray I've actually eaten out of the tons I've caught, might even eat another one some time

They say if you get a small
They say if you get a small round cookie cutter and punch out holes in the wing (like a scallop) apparently it tastes like a scallop when crumbed and fried .. I've never eaten one myself but some people love em .. worth a shot if you have spare ..

yeah i have heard the same
yeah i have heard the same Feral, i love scallops but dont know how to clean or prepare a ray. Would love to try it some day as i have hooked a number of rays in the last couple of weeks
kill it??? eat it!!!!

I didnt cut the whole wing
I didnt cut the whole wing off as I found the underside of the ray was a bit tough. With the ray facing upwards cut along either side of its back and belly and then cut out along the wing towards the outside leaving about 10 mm of meat on the bottom of wing, the lower part is mostly cartilage. Its like taking a fillet off the wing if that makes any sense, I might film the next ray filletting and put it on youtube

Easy enough to prep one ...
Easy enough to prep one ... once caught rub it down with sand to remove the slime .. lay it on a table and cut the wings off .. then cut into long strips about an inch wide following the first cut .. if its a thick one split the strips down the middle .. then just skin the strips ..... happy eating

Speaking of scallops, som fish&ships shops sell these round cuts as scallops!! I've been told this story by a relative who's in this business.... I've tried it once and didn't like it, may be it was the recipe.
