Make a basic brine 2 Cups of Water 1 Cup of White Vinegar 2 Table Spoon of Salt 1 Teaspoon of Sugar Bring to the boil in a sauce pan until salt and sugars are dissolved. Poach Squid in hot brine for about 30secs to 1 Minute. Should be tender! Place poached squid into an ice bath to stop the cooking process. Remove brine from heat and allow to cool. Important must be room temp or colder. Stop eating the squid and pack whats left into the jar but not to tight and leave some room at the top for the brine to cover. Add 1 or 2 cloves of chopped garlic Some pepper corns. 1/2 a Lemon Herbs of your choice, I preferred Rosemary. I also experimented with some sun dried tomato's in oil this time round. Other people use a bit of their favorite salad dressings. Experiment and try different combinations. Top jar with cooled brine. Place in fridge for a week to allow flavors to infuse. Eat! Lasts for Months but you will eat it all in a week.

Everything you need is squids, water, lemon juise, oil, bay leaf, allspice, salt and some sugar.
I think eveything is really individual, so you may add something else. I hope, everything will be great.
