Used to get heaps in Mandurah a few years ago not sure in metro
Now I buy it from Action in Gwelup and is good. $10/kg and I actually cooked up a heap on Sunday.
Did two types :
1) just washed them down and then patted dry. Tossed in plain flour and then into deep fryer.
2) washed etc as above. three stages:
into flour
then into eggs
then into mix of bread crumbs and seasame seeds with a bit of garlic salt (to taste)
into deep fryer (30secs), pull up let drain and let oil heat up again then back in for about 30-40 secs to crisp up and get golden.
Bloody good and even enjoyed them last nigh after being in the fridge.

Butter
Wash and dry them as above then melt some butter in a frypan ,put your whitebait in and cook untill crispy.
Beaut with a sprinkle of salt and a cold beer.Don't believe in adding spices because you lose the flavour of the fish not add to it.

we do ours in flour and quickly shallow fry in oil. make sure they are well dried before you flour them though. As mentioned, great with a cold beer.
