Wouldn't make any difference. You can scrape and wipe all the snot off, put the fish on ice and pull it out 10 minutes later and its all back there.

Wet hessian sack

By placing the fish on a wet hessian sack when cleaning / filleting I find it slides around less than on a hard surface.  I always carry a hessian sack with me now. 

If someone has found an easy way of cutting through the rib cage bones though I'm all ears.

First move is to cut through the throat and around the gills and through the bones holding the wings then cut down along the spine and through the lateral [pin] bones and go over top of the ribs, taking the wings with the fillet.  Once the two fillets are off then remove the wings.
