What an absolute waste

West Australian today, Fisheries seeking frames for research yet the dhuie frame they show has been poorly filleted and the wings - large wings due to the crap job of filleting - remain on the frame
Sorry but what a terrible example to set !!

Some people have no idea of how to fillet fish and their are those who don't know the amount of flesh that are in the wings.
Some , like myself don't bother taking the wings because with only two to feed and usually give them away. while others will crawl over broken glass to get a feed of them.
Still it makes me cringe to watch some fillet and the amount of waste they produce yet when shown will revert to what they know and have no intention of changing.

I think the key to a good
I think the key to a good fillet is having a good sharp knife suitable for job at hand.

Whoever it was that did the filleting is just plain lazy. Prob couldn't be bothered to learn how to do it properly. Large wings not a problem, call me and I'll take them off you. I won't waste them

I'm slowly but surely
I'm slowly but surely educating my boys how to fillet properly. They can skin pretty well now which is imo the first step to learning the dynamics. And yeah sharp knife or you're wasting your time.

A sharp knife and good steel on hand. I run my filleting knife across the steel 2 or 3 times per fish.

Because the call is for frames with head and guts intact - would seem to me, the logical explanation for them being left on.

Easily done
Its very easy to take both fillets and wings off together leaving the innards still in the gut cavity though minus the tips of the ribs.
Usually all the fisheries are chasing is guts and their contents plus the otolith bones to get the age of the fish

I doubt that is the case - which is the point im trying to make. Leaving wings on to assist the process of examination is not a bad thing imo.

Good video there on how to wing a fish properly.
Unfortunatly the key to filleting a fish properly comes with knowledge (from someone who knows how) and experience. Utube will give you the knowledge if you watch enough (and dont have a mate that knows) but the experience part comes from actually putting that knowledge into practice. Impatience prevents getting it right.
The eating of wings themselves is subjective. My mate Darren loves them skinned and on the BBQ but i would rather have a boneless fillet. Darren gets a lot of wings when we go out..lol
Sometimes when the water is quiet, you can hear the fish laughing at you !

Good craftsmen never blames his tools! Sharp knife 100% helps but most of us here could use a kitchen knife and do better. Disgrace indeed and further you don't need a knife to clean wings!

Used to work out the abroholos
back then we could only take our 10kg of fillets now you can take the trunks and wings also. Best technique I use is rip and use my teeth to skin then. Salt pepper flour in hot oil ready to go
