Rock lobster cooking time???

How long do you boil Fresh RL for. I have been in the Pilbara too long and have forgotten the time. Sad for someone who as a student lived on our baot at Rotto for all  the summer holiday and ate cray almost everyday, plus other sea critters.

This is how I do it. Others may use different timimg.

 

 

Once I have despatched the cray by drowning in fresh water then.....

 

Bring the salted water to the boil (sea water is best)

Chuck the cray in.

Bring water back to boil

Boil for 6 to 8 mins then hoik it out and straight into cold or icy water to prevent further cooking.

Obviously a small cray will require less cooking time than a big one.

 

I am sure it will all come flooding back to you in no time at all.

add the crays then 12 mins!!! but it depends on who you talk to as some put there crays in then bring back to the boil then ten mins

Yes I thought 10mins, but got the brain alittle confused with which time it was for NW crays, WRL, Marron, blueys and Muddies. A mate sent me up 3 nice ones fresh from gerro and I didnt want to ruin it. Taste IMO tons better than NW crays'

Steaming is good but if you do boil, start your timing from when the pot boils again. So I bring water with sea salt & brown sugar added to the boil, then put Crays in and once boiling again I leave in for no more than 5 minutes. This is for standard size crays, obviously Jumbos will need more.

Use same recipe for Marron with fresh water & brown sugar.

I was told by an old timer years ago to use brown sugar on crays & marron when boiling and don't ask me why it works but it seems to enhance the flavour.

1 cup raw brown sugar, 1 cup salt (if water is fresh otherwise use seawater which I agree is best) and 1 cup of vinegar (taragon vinegar is best but any will do in a pinch).  8 minutes from rolling boil.

split them, loosen meat, little knob of butter and cook meat down for a few minutes, flip over and cook shell side down with a small amount of mozarella cheese on the meat. Can chuck a little garlic with butter to.

Having been a 'boiler' in the past, I much prefer them on the bbq now....seasoning them to your own taste.

My Boiling recipe

Sea waterbest but a bit muddy up here with the tides. Water, cup sugar and soy sauce until the water is almost black. Now that adds a unigue flavour, and especially for Marron.

Was yummo done simply with boiling, alfafa, thousand island home made to our taste, Bread and heaps of butter.
