How do those rock crabs go as bait?

The ones you usually find and the north mole or any rock wall.

I know they're good snapper baits during stormy weather but what would I expect to catch using a live one during a calm day or at sunset at the north mole?

They must make a good crab broth because I regularly see families collecting them at the Cut
