Bottom Bait
G'day Pete, fishing out from Albany, usually in 25 to 60m of water, my favourite bait would be fresh stuff - either bait fish like yellowtail or seargent baker (SB). The fresh firm white flesh is bite robust and always gets good results. Failing that, good squid and mullies. If circumstances permit, I'll also put on a live yellow tail or similar, or cocktail the bait, with a fresh fish strip and squid tenticles.
We always (as Ryan has often said) 'mix it up'
My personal favourite down here is freshly caught SB.
Sorry, can't recall prices.

Bait
Here in Carnarvon I use occy, squid, cuttlefish[if you know someone on the trawlers],mullet[put net in off beach] and small fresh fillets.
If chasing baldies, head out a day or 2 before and catch ghost crabs.
If you want your arms stretched put a livey out and you're nearly guaranteed to get an unwanted grey overcoat

Mulies....
...catch everything! Trouble is, they're fragile and most times the pickers wipe them out before something good comes along.
For dhufish I like any type of whole fish, and something solid that stands up to the pickers, such as whiting, herring, or yellowtail, is best. I use double snelled 5/0's up to 8/0's for this.
For driftbaiting snapper and kgs, mulies are great in shallower water but my favourite is a strip of freshly caught skippy...everything seems to like it.
For baldies, which aren't big fish eaters, I prefer occy tentacles or fresh caught squid heads...the store-bought squid's not nearly as effective. For this bait I like using a single circle hook from 6/0 up to 8/0.

Fresh squid heads rule ,
Fresh squid heads rule , whole baby occy , scalies just as long as you have some mullies to burley with or if you have small squid you can stuff some mullies into the hood and then fish them

Californian Squid for me (whole & cut pieces). I dont use much else now and yes shop bait ^ $14.95. I used to catch my own squid (fresh/local) but dont like the fact they curle/harden up where as the shop USA stuff doesnt.....go figure!

OCCY
skinned and cut into chunks the night before. Place in an icrcream container(eat icecream first)! Then marinade with Captain Gordon's Chumline. Put on a single 12/0 Mustad tuna circle(no striking required, if anything give them a little line) !!!
If I'm using squid on a snelled rig I stuff it with a mullie and a squirt of Captain Gordon's !!! The mulie gives it flavour(and doesn't get eaten by pickers in 5 sec and also gives the squid a nice plump shape!!

FRESH IS BEST
I allways find fresh bait to be the most effective, but i spose just about anything will work given time and place
