Bonito

Heading down to Bremer bay on the weekend, we caught a couple of bonito last year but threw them back as i was told not the best eating.
Is there a way to cook them or should i just chuck them back again. Cheers Rusty

I've heard the oriental
I've heard the oriental bonito are better eating than the leaping bonito.
Leaping bonito have spots on their backs and stripes down their sides.
Oriental have stripes on their backs only.
Make sure you bleed them straight away and put them on ice.
I just throw them on the barbie with some butter + salt and pepper.
Don't overcook them you want to have it slightly rare in the middle.
I've always eaten them fresh. Not sure if you can freeze them.

Caught mine, didn't bleed it still taste bloody awesoome fried with light a coating of tumeric, salt & pepper and dash of corn flour for the extra crisp!

bonito not bad
bleed on capture,fillet and skin,toss in seasoned flour,and fry,also can be frozen plus eaten later

watsons leaping are terrible, oriental are meant to be quite good.

Went for a troll off
Went for a troll off Hillary's yesterday off 3 mile in around 30m of water. No luck on the Bonito though and didn't see any birds working either. This is was the first time trolling off shore for us so probably not a really relevant report. Has anyone else been having better luck than us?

Bleed then then fillet and skin have some soy and wasabi on the boat and hey presto lunch is served.or the other way I like them is bleed put on ice once home fillet and skin and light fry with come garlic and corrander mmmmmm very tasty

Not bad, i banged this recipie together on the weekend and it went down a treat.The Mrs even loved it. http://au.lifestyle.yahoo.com/food/recipes/recipe/-/12969013/bonito-white-bean-tomato-salad-with-caper-mayonnaise/ They dry out pretty quick so i would reccommend cooking in a good amount of olive oil with salt and pepper and only like a medium steak.
