Bleeding Dhufish

This subject has probably been raised before so apologies if thats the case. I'm just wondering how others treat thier catch in regards to cutting the fishes throat or spiking the brain etc. I'm particularly interested in your opinions about dhuies. I always have a slurry of ice in the esky & i put my fish straight in there. I doesn't seem to make much difference with KGs but with dhuies there always seems to be one fillet that has a pink tinge on the inside. So lately I've been necking them & that seems to produce two clear fillets. Not sure that it makes any difference to the taste though. Interested in your opinions.

If you spike your fish properly you won't see any blood or pink in your fillets.
Pros don't bleed any fish because it leaves an opening for bacteria to enter and shortens the shelf life of the fish where as spiking leaves just a small entry point into a part that usually isn't eaten or seen during filletting.

Thanks carnarvonite. I never even thought about bacteria. I only ever do day trips & fillet as soon as I get home, so it might not be an issue for me. Still I'm glad you mentioned it. It's Something else to consider.

if you cut from about half
if you cut from about half way up the gills to the top on both sides you get the main vain coming from the fillet an only have to go about a inch deep. you will see when you hit it! if you cut its throat you will get stomach contents in your ice, not a big problem on a day trip but if your fish will be on ice over night or 2 its not the best for them.

iki spike then the slit in the gills is how i've always done it. Easy and effective.
Personally never been a fan of hacking a decent fishes throat. Looks terrible in photo's too

cut and spike
I cut there necks and quickly spike them with a small stout knife, straight on ice. I also try to be gentle with the fish ...i hate seeing people throw fish into the esky as i think it bruises them (especially baldies)

Foam cushion
Do what the pros do, drop their fish on to a piece of foam cushion. Once on the cushion they just lay there, no flapping about and bruising themselves, makes it so easy to spike them.

best way to bleed in a fish
best way to bleed in a fish is to look next to the pectral fins as the beginning of the gills, you will see some soft tissue and one some speices what looks to be a darker "underskin" area. just genlly put your knife in there and wriggle it around, do it on both sides. fully bleeds your fish and its how divers do it, a good dhuie will turn the water a yellowy green colour so thick you have to swim away from it to see, thats the best way i have found to bleed a fish and then its still in very good photo quality
