Flathead
I caught a couple the other day too. In the same ground as some very large sand whiting. Same as you. I've caught them many times before. I think they're just a small species of flathead. The bigger ones seem to be a different species. Not sure to be honest but thats my take on it. Someone will enlighten us both

Yeah the small flathead you
Yeah the small flathead you catch in big numbers are generally the long spined flathead (Platycephalus longispinis), which have a max size of only around 30cm. The larger ones you catch in the swan-canning river/inshore regions are generally the yellowtail/bairtailed flathead (P. endrachtensis). A bit further offshore and down south you will typically catch the southern bluespotted flathead (P. speculator).

Get yourself a flatty flipper
Get yourself a flatty flipper and you don't have to touch the little bastards.
I made one myself from a bit of heavy guage fencing wire after seeing one in BCF.
Works a treat.
On a dropper rig i just grab the sinker with one hand, slide the hook of the flatty flipper over the fishhook close to the fish with the other hand.
Pull tight and flip up and away from the body.

with the spike wound you
with the spike wound you need to rub it with the flatties belly slime, dunno why but it cancels out the venom/toxin
The art of fishing consists of casting, winding, trolling and jigging
while freezing, sweating, swatting and swearing.
