Would have to be whiting either KG or sandies but I'm dying to try some fresh sashimi tuna. I know it's not everyone's cup of tea but I really love a feed of fresh herring with couple of beers.

Something that hasnt been

Tue, 2009-12-01 23:25

Something that hasnt been even mentioned yet: Dolphinfish :D

The key is to cook it til its just done and you get this wonderful sweet flavour (otherwise cook it too long and you use it and it tastes like a lot of other fish). I guess having a limited season, and loving them so much for the fight and the colours might have a little to do with it (might get sick of it for the whole year). Definately rate them high without all that though.

Otherwise my favs are pink snapper, baldchin, whiting, and squid.  Lots of others are great as well of course. Dont like coral trout though, much to most peoples surprise. Coral trout wings however, are great, but someone else can have the fillets :p

personal choice

Wed, 2009-12-02 04:16

i think its got abit to do with personal choice , reputation ect but alot to do with how its treated after capture and how its cooked! good fish can be stuffed up and taste like crapola very quickly! in the opposite hand a half decent fish thats bled iki'd ect and cooked correctly can be quite a nice fishdish. everyone has personal favs tho

coral trout red emp fingermark mangrove jack blackspot tuskie dhuie ect all get my vote!

gotta say that a fresh 50cm jack cooked whole in the coals right next door to a mud crab sitting out under the stars with a big glass of jack daniels and a group of great mate mates is almost allmooost unbeatable! =)

Nobody has mentioned another Latjanid species. The humble Spanish Flag. Just the best fresh. Also Threadfin salmon fresh is very underrated and second. Then certainly whiting. Coral trout and red emporor and all the other Latjanids up with Flags in taste.

Moses perch, fingermark etc all Latjanids and all bloody nice. It is just that flag dont grow to gaint proportions and the flesh fresh is delicate +++.

Matt you have to give it a go. Unlike most people up here, if it is size it goes in the esky. to many people up here toss them, or use them as live bait for Macks rather than taste them. Just reputation IMO.

I had some years ago caught off Broome and never forgot that feed. Then when I came up here and caught some more you can imagine that I was keen to try them again and I was not disappointed.

No contest I reckon, although beer battered red emp does go down a treat.

Funnily enough the best tasting bit of fish I have ever eaten was a fresh black jew in the Vic River on a barra trip. Had it beer battered with a heap of barra and it was hands down better than the barra, but again, the location and situation added a heap to the overall experience

I am surprised that there seems to be such differences of opinion which leads me to think maybe it's all in the cooking.  I do recall earlier this year that a coral trout we ate on the evening after capture was dissappointing.  The remaining pieces cooked and eaten the following night were brilliant?  Should some fish be rested before cooking?

After a long day fishing in the sun

Thu, 2009-12-03 16:32

The best fish you have ever eaten is the one you have just caught, returned to your camp and slapped on a hot plate or stuck in the coals or stuck a stick up its but and held over the flames. Tongue out

The beer is always the best on those days too

Seriously thou

Coral Trout and red emporer from northern waters

Bass Groper, ruby snapper, baldies and dhu from south.

if i had to pick just one......hmmmm

I would go for the the Bass Groper because they taste great and a 20 kilo model is still a baby.
