Snook, Eating Quality

As titled, what are the eating qualities of the humble snook.

 

I just watched a FWA episode where Nick Hocking caught one and then described it as smelling like Kerosine.

Now i have caught them in the past but always gave them to my old Ding Mate who loved them, also i saw a couple of old codgers in Busso once come in with an esky full, back in the days when the old wooden jetty next to the Big one was operating. Well they were stoked with their catch.

 

So what do they taste like, or do you only use them for bait ?

a few old blokes down here (Busso) who chuck them in the smoker. Over the years i've caught some hooters but have never bothered seeing what there like. Be interesting to here what others think.

mostly bait, but i've floured a couple up before and they were perfectly acceptable with a couple coldies.

I enjoy them, bake the larger ones with garlic, lime leaves n white wine or something like that, turns out nice.

...with the bones. Certainly aren't any more bony than, say, a gardie. The flesh is VERY firm once cooked, but has a nice taste. As said above, not bad tucker when smoked. We've tried it using 40cm fish right on up to the metre long ones and they always come up a treat. Can't say we've tried it using conventional cooking methods (frying/grilling/baking) but.

yeah they are perfectly acceptable to be. Eaten quite a few, fresh they are pretty dam good.

Dont freezer any good tho.

personally i found the flesh looked a bit grey. i wouldn't eat one again. not very good
