sashimi

can someone please let me know how to slice up sashimi so it turns out beautifully and not stringy.
are you only supposed to use a certain part??
i keep stuffing it up. cheers!

Its a bit of an art really,
Its a bit of an art really, no really. You can't really approach these like regular fish, and I learnt some tricks of FW people and youtube.
Step one, spike through the front of the head, and nick under the pecs to bleed them out.
Steps .... trim fins, trim belly, cut head off, skin, then cut off the 4 loins.
I think its important to cut the tuna up right from the start, once you have the 4 loins, start with one from the top of a fillet and you next have to trim the muscule that runs in the opposite direction off the top and is full of sinews. Next orient it as it would be on the fish and give it a bit of a squeeze to make the bloodline pop out, trim that off, and you end up with a fairly regular square block. Next cut that across or diagonally to get the right size pieces, don't go too close to the end, it gets stringy again.
Been getting a lot of practise with these lately ;)
