I've never eaten a sambo,
I've never eaten a sambo, not a big fish eater. But from what I've read on here this is what my understanding is:
-the just legal fish are your best bet
-the bigger they get the more chance of having worms
-it's hit and miss, some fish are good firm flesh, some are mushy, so bit of a lucky dip really.
-some like it, some don't.
-better in a curry or something like that, also think I read someone had more success with thin fillets cooked quickly?!
So keep a just size one next time you get one and give it a try. Worst case you cook some up and don't like it and then just use the rest for bait/burley next time your out. Not ideal situation but at least it's not going to waste!
hope that helps!

I am, as I've said, merely competent. But in an age of incompetence, that makes me extraordinary.

allen bevan (owner of Shakira)
(And top bloke) knows a few things about this. one of the parasites
Found in sambos was first identified from a fish aboard Shakira.
He told me that if you bleed them and immediately bury them in
Ice they are fine table fare. I've tested this + so far it's true.

We ate an 18 kg amberjack
We ate an 18 kg amberjack from Saturday MAAC club comp (we would normally release all ambers and sambos but not killing an animal without at least eating it). It was very good! I would not eat a sambo that size.

I've kept and eaten 2 x 25-30kilo sambos from SA and they both tasted great.
They were shared amongst several families who all enjoyed it. Both were bled and iced immediately

Naa they're poor eating. On the same level as trying to eat rays. But I suppose it depends on what else you catch

Not that thrilled with the soft texture of snapper and would rate the samson we ate above it.

Haha, first time around
Haha, first time around didn't have high expectations with the poor wrap it often gets.
Maybe cooler waters in SA do help.
I've eaten 2 big kings over 20kilo (usually release them), one was nice and the other was disgusting - couldnt eat it.
Both were bled and iced. The 2nd one that was mushy and very strong tasting we did try to revive it for 5-10mins (as I wanted to release it) so maybe this has something to do with poor eating qualities in seriola if they get to stressed before dying??
Not sure - just my experiences....

Oh no Guys
You must need a taste bud adjustment. Have tried it on a few expired ones that couldnt be released. NEVER again.
Sadly a dead sambo now = burley or burried under a tomato plant. The tomato's taste sensational!
