Look forward to seeing some answers
I'm guessing anytime you can see them and therefore where to chuck your net?
Saw pics in here of someone who caught a bunch on lures- all I could think was wow- aren't they vegetarian fish?

Mullet ?
Depends on what you call mullet. Seems quite a few refer to pilch [yellow eyed mullet] as sea mullet when they are different and have different eating habits.
Mullet are weed eaters and can be caught on bakers dough and as reported lately on tinned corn, usually caught by sight casting in daylight hours.
Pilch will take small baits, prawn, bit of mulie, maggots and small lure. They will feed at night especially if there is lighting, like on a jetty, bridge etc, as well as in daylight hours.
Bset way for both is 60 metres of square hooks, a comfortable chair and good scenery.
