 A decent stone to get the initial edge & then a butchers steel to finish off & maintain that edge. Try putting a little dish washing liquid on the stone instead of soaking it in diesel or oil. Works a treat.

Got mine from the local butcher shop, little red & black unit with a suction cup to stick it on the bench or what-ever you want. All my knifes are now super sharp and it only cost $25. most butchers seem to sell them and reccomend them and they play with sharp blades all day.

I got a Nirey unit about $280 i think from memory awesome bit of gear easy to use and never got dull knives anymore i think i bought mine from king of knives in one of the big perth shopping centres cant remember which one they all look the same to me.

Take the time to learn how to use an oil stone and steel properly and you will find your knives will last longer than using an electric one.

 

Do not buy cheap knives or a cheap steel, the knives will never keep an edge and the steel will cut out in no time.

 i bought a 40 dollar knife shapening steel at oceanside recently,very happy with it ,very easy to use,gots my filleting knives razor sharp,even brought some of my dud kitchen knives back from the brink of extiction,but cant remember the name of it,guess the boys at oceanside can tell you,if you live closeby i can show you how to use the steel im talking about

chefs choice 120 are pretty good. Oceanside have them. quick and easy.but as mentioned by carnarvonite, cant go past stone/steel.

I agree with city fliker a stone and a steel is the way to go. Ive been butchering for a while now

and the best way to get a staysharp edge is to use a very fine stone and then finish it with

the steel ( good quality one). The only agvice I would give that differs from city flicker is DONT use dish

detergent as it clogs the stone and it will slowly rot the stone. it ends up putting uneven score marks in it and

you will have to throw it away.

Once a stone is out of shape its only good for axe sharpening, if you cant get it refaced.

Its not hard with a bit of practice and once you get it right your knives will be the envy of

all your mates. happy sharpening

You need to rinse the stone off after each use or yes it will clog & cause the stone to rot. I've been using dish washing liquid on the same stone since I was 15, so 21yrs with no problems & the stone is still in good order.

Either way though you can't beat a quality stone & steel for sharpening. Using electric sharpeners or the wheel type sharpeners is a good way of destroying a quality knife faster. You want to be able to change your edge angle to the individual blade or you run the risk of chipping the blade, especially on hollow ground knives.

Just my opinion.

 Agree with that Naydog. It takes a little time to get used to the stone but I can now get my knives very sharp. The thing is to get some quality knives as well. I have Dexter Russell and Swibo Filleting knives and a slight touch up with the steel each filleting session keeps them very sharp.

I purchased my steel in Melbourne in 68 for about $25, a second cut Dick brand, used it for many years as a slaughterman and on fishing boats, and except for the plastic handle breaking about 20+ years back and being replaced by a bit of copper tubing ,  it is still better than a lot of steels on the market today. Have had many offers for it but definitely not for sale.

if you go to a kitchenware shop look for a "furi" diamond fingers manual sharpener. it folds up and can sit in your tackle box or pocket......three swipes of the blade through it and it is razor sharp. about the same size and shape of a radar detector and unfolds to expose the diamond finger sharpeners.....approx $35....lasts for years. Used mine every week at least, bought it 5 years ago and no sign of wear or tear....

Knife shoulders

Keep using it and you will find your knife will have shoulders on it like a bull elephant, as you shapen it the angle stays the same and the edge is going to get wider each use instaed of being about 1/8 - 1/4 inch at most.

I do own one of those diamond fingers and can say it is definitely easy to use and gets a good edge, but it does your knife no favours at all.

I only use it on my bait knife or cheap fillet knife as I think it is pretty bad for your blades.

 i work in the city, so every so often i take my fishing knife, and kitchen knives to cut-it-out on hay st opposite his majesty's.  $7.50 per knife.  i have a steel with my fishing gear, about $15 to buy, and every time i go fishing give the knife a sharpen the knife beforehand.

 Learn to use a steel and stone and you will never have dramas again. The key is don't try and be a genius at start and be quick as a butcher but get your angles right.

I live on a farm and kill at least once a week, and wool will make a knife blunt in no time, but a quick brush up on the steel and it's Micky mouse again.
