How to bake herring

I have some freshly caught herring that i plan on baking.

Current plan
1. Cover in olive oil, some garlic, rosemary and ground pepper.
2. Wrap in aluminium foil.
3. Bake at 180 for 10 minutes on each side.

Will this work? 

Please share your baking method, cheers.

Best way to cook herring is straight out of the water and on to a hot plate.

The scales lift off, guts shrivels up in a ball  and it only tkes a couple of minutes.

 Fillets smeared with horseradish and butter combined on flesh side.

Rolled up to show skin side.

Placed in baking dish and covered with cream and sweet chilli sauce.

Bake 20 mins hot.

Un freaking believable!

I cut slits into the thicker parts of flesh and stuff ingredients in there.  This just helps the fish cook (the thicker parts) more evenly i find. 

I dont bother flipping it either if it is wrapped in al-foil.  All the lovely juices will leak out when you flip them. 

Generally say 20mins @ 180-200degrees for every inch thickness of fish/fillet.  You can give it a bit longer if you need because it's wrapped in it's own juices you wont dry it out too much. 

 

Everyone seems to love my tailor baked in peanut oil, soy sauce, spring onions and ginger. Chilli's optional.

Other simple combos: Black bean paste & soy.  Butter, lemon zest, ginger, & white pepper (good with whiting).  Rosemary, butter & garlic.

 

PS: I bake other fish over herring.  I prefer herring filleted and deep fried in breadcrumbs, YUM!

Cover with milk, cook at 180 for 20minutes, throw out milk and feed the cat the herring

my favorite way to cook herring is by putting the fillets into a mixture of vinegar, white wine, lemon juice, a finly diced onion and what ever other herbs you want.

into the fridge for a couple hours n its magic.

From most of the recipes submitted you may as well eat a handfull of spice because they are going to smother whatever taste the herring has got.

You mght as well put a hunk of oily rag in the pan, it will taste the same.

why not just cook them wrapped in foil with a bit of butter and maybe a bit of lemon pepper.

i cant understand why so many cover their fish with spices and sauces when most fish a nice eating without it
