I caught one a few weeks back and bled it soon after xapture and noticed the ammonia smell in the esky, I filleted it and froze the fillets, cooked some up the other day and it smelt and tasted funny....is this normal? I didnt bleed it immedietly, prob 10 15 after capture and it had settled. I gutted it finned it, cut to back of head and cut along the spine, was only about 800mm, do the small ones taste funny?
I always fin and gut them straight away if keeping . When you get home soak the fillets in milk overnight, u'll have perfect gummy every time unless ur absolutely shithouse at cooking
doesnt matter if its a gummy or other shark you are going to keep,when caught killed eg cut tail fin off,headed,gutted and placed on ice straight away,later when filletting,skinned,cut out blood lines,leaving as much of the whiter meat should help with the horrible amonia taste on most sharks including gummys ,hope this helps on your next shark capture ,same process for sambos aswel exept finning

best to be your own judge when it comes to gummy's. the smaller ones dont have much meat on them

I agree with Rig, no point taking a gummy that isn't going to give you much of a feed.
I reckon they are at their best around the 1m mark.

Just wondered if like the whaler limit they can be to big.
Not sure what time of year is best Peter but I did catch one in the sound three weeks ago,size was about about 1200 .

Side by side I reckon bronzie tastes heaps better IMO , deep fry it and there shouldn't be any ammonia taste and bleed ASAP

Ones should taste better as they don't have as much ammonia... Goes for a far few species, doesn't seem to bother the Japanese though!
