eating shark

 hi guys, i want to start catching sharks and i might keep a few gummy sharks or black tips and i was wondering what do i do as soon as i catch it. Bleed it, put it on ice ect.

Clean it

The quicker you clean it and get it on ice the better the result.

You have to get the innards out as soon as possible especially the brown strip along the spine under the guts and the little canal that runs down to the tail from the gut cavity.

Just cutting the fins off does nothing except get rid of something to hang on to when cleaning it.

 

If done quickly enough, there is no need to bleed it and make a mess everywhere

 What's the max size you can eat? I love  shark and was told not longer than 1.5 m. Longer than that the taste changes.

Size limits on all shark is..

Start at the front of the main dorsal then measure back to the insertion of the second dorsal [ start of the back part of dorsal ] This must not exceed 700mm.

...ALL shark, coz the last time I checked the regs, that 700mm dorsal measurement only applied to whalers...makos, hammerheads, nurses, gummies (have to be a monster of a gummy!) and I think even tigers would be exempt...at a guess, the most likely whalers we'd see locally would be bronzies, thickskins/sandbars, blacktips, and bulls...

Grey nurses are protected but tawny nurses are allowed to be taken

 

The bigger a wobby / carpet shark is the better its eating quality, small ones are tough and hard to fillet where as a big one is simple once you get rid of the breast bone and arse bone.

 Guts out, fins head and tail off. Then tie to boat and soak in seawater over the side to leach the shark smell (amonia?) That last part was an old italian trick, done my last bronzie that way and he came up delicious!
