Eating Amberjack/Sambos

Just wondering what others opinions are of eating Ambers and Sambos. Just finished dinner of beer battered amber and it was great! Have kept the odd smaller amber and sambo lately and found the ambers haven't had any of the red worms in the flesh like the sambos have. The flesh is nice and firm and cooks up well. It's definately no Dhuie but I recon well worth keeping one if theres nothing else in the esky. Prefer the ambers over the sambos though.

Also kept a 10kgish sambo down in Albany the other week and it didn't have any worms and tasted great pan fried with bread crums. Do you think the colder water fish would have less worms/parasites?

dont know about the parasites but i do like sambos and ambers as a nice feed. they dont have the taste as dhuies and baldies, but they are good deep fried with chips  or with garlic.

Well, I will take baldy over anything, then  small dhu,  then amberjack, then pinkie, then larger dhu and on it goes.....I recon amberjack are top notch, but careful you dont overcook it,it goes dry very quickly.

 

Small sambos are not too bad, but i have only ever kept only them if they cant be released alive. Never had a big sambo., always released them.

I love amberjacks in curry or fried up nice and firm i have to say the same as sambos too. Ive kept even a few big fellas and no worms but have kept a few 3kg fish and they have had worms. Just a luck of the draw with them sometimes, feels like a waste when they do, wish there was a way of knowing so you dont waste the fish.

havnt tried ambo's but i cant complain bout the taste of the sambo. there is so many ways to cook up the sambo as the flesh doesnt fall apart like so many other fish

Small ambers, sambos and ytk's are perfect for any fish dish that has a lot of flavour eg curries, marinades. They also fry up great. Its all good cooking dhui, baldies etc in the pan but its a waste to use them in strong flavoured dishes. I think some people are just a little snobby when it comes to eating fish!

John tells me the Amberjacks eat well so we kept one from the sunday expedition to have a bit of a taste .

Lurcha ! I am definately a fish snob ......Have been fortunate of the years to always have fine eating fish in the freezer or at worst about an hour away.

Have tried sambo , sorry not impressed with their eating quality .......but they go hard and release fine to fight another day and I'm happy to do just that.

More for the guys that do eat'em i guess !

Had some Amberjack last night !

Was pleasantly surprised , was quite a mild fish flavour and the texture was nice

and firm .......I'm thinking that a little underdone is better than over cooked as it may

dry out a bit.

i have found sambos and amber's quite nice.

once u fillet them cut out the blood line (the red bits) and cut them into thinnish pieces probly around 1 cm thick.

goes well on the bbq, or deep fried but as previously mentioned it does dry out quick so be careful

are really, really good to make thai fish cakes with. Has heaps more flavour and juicier than using better quality fish such as dhu or snapper JMO!

Well Huggy, hard to argue with the old blind taste test on the missus.....and she picks Amber over dhu.......I know it sounds funny, but nice to have a fish that is both great to catch and nice to eat. Each to his own though.

AJs are good on the tooth if iki and bled properly.  Had a plate of AJ sashimi this evening courtesy of Till and Tim but made the mistake of leaving the table for a minute, came back to 2 smiling kids and an empty plate ............

I saw Sambo in Kalis Leederville a few months ago, $8.99KG whole!  Maybe it was an experiment.  Have had Amber b4 in Curry and it was excellent.

I am a new member to fishwrecked, so g'day to everyone. I have read in some comments about the AJ's and Sambo's having worms, my question is where abouts on the fish do you look for them, just around the gutt or all over and if you do find them do you have to throw the whole fish away.

Not from personal experience but I understand when cooked you can't see the worms and there is nothing in the worms that will hurt you anyway.  I guess if you can get your head around eating cooked worms with your fish go for it.

Its in the older ones, So only try the small one 10kg and below

Same with tailor up north Only the big old ones have worms
