The Carnarvonite
I have had the pleasure of dealing with John (carnarvonite) recently over a knife issue. John lost his favourite knife of many years (I’ll let him tell the story if he wishes) and we needed to source the identical replacement.
It is fair to say it was a bit of a challenge to find the knife and get it to Perth. We thought we had it, but when I sent it to John the knife was too short (18cm). We selected the right one (25cm), but it had to be “imported” so took some time to arrive. Happily, the order has just turned up.
This knife is a “beast”. It is the ultimate big fish processing knife, and no doubt would work well with most animals. 18cm and 25cm blade models are shown below.
We have affectionately branded the 25cm knife as “The Carnarvonite”. All the selection work has been done by a legend, and out of the hundreds of knives you could choose from this is a very good one for the purpose of processing big fish.
$110 retail and it will last a lifetime, if you look after it. Our specialist fish processing retail knife selection, to cater for different requirements, is now complete.

Where do you get them from ? What site , they look worthy .

Great range
Thats a great range of knives there Mick... i may have to head up for a look.
I already have the 'slicing' knife second from the bottom. Easily the best knife i have found for cutting mackies and wahoo into cuttlets.

Victorinox, second boning knife down
I was taught at TAFE with these for seafood processing and they are great knives both in quality and filleting versatility. Sharpening the thing now !

Story behind it
The story behind the loss of the old knife can probably called an Old Age Moment.
Was using it cutting rope and because I was seated on the usual milk crate in front of the Nissan and had finished so I placed the knife on the bumper section of the roo bar, you guessed right. I forgot about it and took off down town about half hour later. Only went about 1km and pulled up in the car park then remembered the knife, bugger, it was gone, Retraced where I had come and sure enough it was gone. Some lucky prick had scored a good knife We used that size and brand religiously when shark fishing as they held a great edge, didn't snap when put under great pressure cutting through the spinal cords of large tiger while they were trying to take your leg off. Many thanks to Mick on chasing another one down for me and thrilled to bits on him giving it my Fishwrecked name

Facebook Trolled Without the Facts
Put this post up on our Facebook page and received the following comment about our knives - don't you love it when people go off without the facts.
Rip off.. all those knives you can buy from a place called food stat tech all over australia. . For half the price you have them for. I'm a beef boner by trade knives are my specialty i also sharpen knives my edge is 100× better than any factory edge $15 per knife. . Find out for ya self
Thanks for the comment, to which we need to respond. Yes, you can buy the knives online from Start Food Tech based out of Melbourne (as it is the importer). If we take the 15cm Victorinox curved thin boner (my go to knife) it would be $46.95 including postage (just added one to a cart). We retail this knife for $40, and you can come to our shop and walk out with it.
The same applies to most of the other knives we stock and we note the Carnarvonite is not even available through their web site. We spent a lot of time and effort assembling a range of good quality knives that are particularly suited for fish processing applications and they are available from one place in a retail environment (that we pay all the overheads for). If you want to buy online, pay more than you would from our shop for a single knife, and wait for delivery then that is up to you. We strive to make our pricing fair and reasonable and provide a good value service for our customers, and not rip anyone off. Cheers. Mick
