As a kid growing up in the bush and even as a young adult loved the King George Sound Salmon with saladand beetroot and would still have it if it was available, hope the Mendolia family make a go of it as it's a waste of a natural resource just as bait and pet food.
The general flavour is usually strong compared to other local fish - usually people encourage others who are sceptical of its edibility to utilise it with strong flavours, eg curries or italianesque tomato based dishes. I think that internationally and here people would enjoy it on a standardised level, palatabilty-wise. Good on em.

They used to do that before, not with Jim, but there was a canning place in both Busselton and Albany canning the salmon.

Did it for years......glad it stopped as we now see them every year in the metro area
