 Jarvis walker from big w....   couple of flathead fillets soaked in brine.  In the smoker....

 Try some Herring Randall, i have done Tuna and Mulloway too . The options are endlless and the results are usualy great .

$50 bucks well spent hey, as others have said mulloway, sambo, tuna, my top 3 favourites are skippy tailor and herring.

 

Even people who dont really like fish love it smoked! experiment with the brine too , apparently a dry brine is better

on the weekend - bloody beautiful also some spanish mackeral but it was kind of ordinary (much better pan fried). And yeh herring, skippy and whiting smoke up great also try fresh  duck for something different

 Havent had much luck with smoking fish last summer, anyone got a kick ass/fool proof method?

I think I had my heat too high and often dried fish out too much and didnt really have a smokey flavour

Cant beat aussie salmon for smoked fish, tailor and herring are close behind.  Need oily fish to do it I reckon.  A big sea mullet would be tops on the smoker but havent got one to try yet.

Ive tried wet and dry brines and the dry one is simpler, get your sugar and salt mix it then rub over fish, sit in fridge for a couple of hours until juices come out then wash off and pat dry. get your smoker smoking and then out your fish in.   I know its not the best way but its simple and works for me

i have a bradley smoker and love it, i don't use brine for my fish, did the first time and didn't like it and smoke for 40 mins and it comes out beautiful! smoked some Wahoo last night along with a chicken

A 44 drum on top of some brick which had the fire and drop section for the ash. Gut and gill some herring than butter fly them, hang them for a while to dry and smoke for about 3-4 hours, fairly slow coolish smoke. Have also done salmon fillets and cobbler. Tasted brillant. Have only got a small smoker now only used it once with some sea mullet which turn out good. Always trial and error with heat and amount of smoke and what type of wood chips to use. But always goes down well with a few beers.

I did a cold smoked Spanish Mack and some Wahoo. Used a smoked salmon recipe but swapped the dill for some chilli flakes and it came out seriously awesome.

In terms of other meats - make some Speck. I did a pancetta last year also which was great. But again, all cold smoke so not sure what setup you are running
