Herring Recipes

Hey All, Going for another fish on friday after school hoping to get herring and i was wondering what ways do you cook your herring ive only cooked them in bread crumbs and wanted to change it up a bit see if i can get a bit of a different tast for the humble herring!

Smoked
butterflied , brined in salt sugar water and a dash of Cajun then smoke the bad boys. I reakon great like this next day as a snack with an ale or Fanta

Have too agree
i reckon smoked herring and having it the
next day would be the pinnacle neighbour..
but id say he ll be washing it down with a
nice cold cordial ! Lol

Simple
Used to do it when pro salmon fishing straight out of the water and on to a hot plate, no gutting or scaling.
The gut shrivels up and the scales flake off once they are cooked.
At home, fillets done in butter in the frypan, no extras to destroy the taste

They're great pan fried in a bit of olive oil and butter with salt and pepper, but you can throw in some sliced garlic and chili for something a little different. Another good one is a pinch of tumeric (too much will be bitter) and chili powder in a little salt and pepper seasoned flour, dust fillets or whole fish and pan fry.

Hezza are one of my favourite
Hezza are one of my favourite fish to eat.
Lightly flour and into an egg wash with a dash of milk and a blob of mayo (nanna's trick for those who don't like the stronger taste) then into bread crumbs with salt, pepper, smoked paprika and dried dill and into hot oil and about a minute either side and fresh lemon on top.
The trick is to bleed them straight away and we do this by putting the thumb on top of the head and a finger in each gill and snapping their heads back till they squirt blood.
