Bleeding SBT

So...the missus want sushimi.
Beats me why, dont ask...but whats the best way to bleed tuna? I assume cut the throat, but do you also fin them or anything? Ice bath straigh away?

Lift the pectoral fins out
Lift the pectoral fins out at 90 deg, horizontally behind the pec at same level push a knife in about 2 finger widths back and push knife in about an inch.
Then lift the gill plate and where the rear of the gill cavity curves around (say fish is laying tail on left head on right of u) push knife in at about 7-8 o'clock where it curves around and you will cut artery from heart to gills.
Then put your deck wash in that hole and it'll pump most blood out.
But you can also just cut throat :-)

when we bleed them i spike
when we bleed them i spike them first then slit the throat and head first into a bucket. i have found all the blood will drain out

We do pectoral fin thing and hang them
behind the pectoral fin for us.
My missus makes awesome sushi rolls ( as opposed to sushimi) from our cooked SBT and it is fantastic.
Never done sushimi with local SBT but sand whiting is awesome for this!
We chased them all day today, found a couple of big bust ups and plenty of bird activity but couldnt get them on the hook
So had to make do with KG and Black bums......lifes tough, isnt it?
Did anyone else get any SBT today?
