Considered using large
Considered using large circles instead of a gang on the sharks? (especially if releasing them).
Havent really fished for sharks a lot (only hooked up to once decent one) though. I do wonder how best to attach the balloon? I just tied mine to the leader below a swivel so the baloon pressure would set the hook, but guess you could also use a method where the balloon pops of really easily? Dont know whats best, but something i've wondered about.

some people have a separate
some people have a separate rod to snap the cotton string when they got to the desired distance, but the bait has to be dead unfortunately(unless u got the big balloons with helium). you can always google something like ballooning rig pics it should come up with what your looking for.

I have tried it, but a lot
I have tried it, but a lot of things need to be in your favour...An offshore wind from where you are standing, and not too much current, or else the bait keeps coming back to shore.
A guy at BCF rockingham made up the trace which was 2 x 8/0 hooks on a 80 kg plastic coated wire rig - just twist the wire a few times around itself and melt the plastic with a lighter - both hooks for the same baitfish. Use about a metre of this and attach to a big swivel and attach a piece of about 600mm 80 kg leader to that - then use anothe swivel to attach to your line.....on the swivel that attaches to your line, tie a 10kg line of 500mm to it also...then just tie your balloon into that. Attach your bait and give it a light cast, so not to kill the baitfish, if it is alive, and let the rig drift out with the offshore wind on freespool. when it is far enough out, just click the reel over and wait...then you will see the current drift on your line and know where it will end up....the balloon just pops when the bait is taken, and you just put new one on...
Watch out for those seabird things, as they can dive to about 2 m deep to get your bait too...then the greenies sh...t themselves...
Like I said..a lot of things need to be in your favour - you can row the bait out with a kayak too...

Rig
Get about a metre of wire trace with about a 8/0 or 9/0 hook and large swivel on the other end connected to your main line. For the balloon trace you need about 1-1.5 metre of light line--5-10lb. tie one end to the swivel and the other to the balloons 2-3 leaving a 15cm tail if you are going to feed it out over a shallow reef.
If feeding over a shallow reef tie a lifesaver [lolly] to the tail and another bit of light line to the swivel tie the ends of the short bit to either side of the lifesaver. The lifesaver is now holding the balloons and bait together and once you put it in the water it will melt releasing the bait from the balloons hopefully out passed the reefy bit.
Try to get hold of fresh mullet for bait and put on whole. Some people poke the hook through the eye and put a half hitch round the tail or ffe the hook right throuh the eyes and stick it through the back so the trace holds the head in line.
When you get a hook up the balloon trace will hopefully break off if not they will burst from the water pressure.
